Ingredients needed

To make the burger buns:


  • 120 gr of whole milk
  • 10 g of dry baker's yeast
  • 350 gr of T65 flour
  • 7 gr of salt
  • 35 gr of white sugar
  • 1 egg yolk and 1 whole egg
  • 40 gr of unsalted butter

To make the gilding:

  • 1 whole egg
  • A little milk

Preparation of the recipe

Dry mix

In the bowl of a stand mixer, mix the flour and salt.

Liquid mixture

In a bowl, mix the warm milk, whole egg, egg yolk, sugar and dry baker's yeast. Mix everything well with a whisk to incorporate all the elements and dissolve the yeast.

Combination

Add the liquid mixture to the dry mixture. Knead at low speed then increase the speed gently once the liquid part has been well absorbed and this for 3 to 4 minutes until obtaining a homogeneous dough.

Incorporating the butter

Add the softened butter in pieces and continue to knead for about 10 minutes.

First rest
Hand shaping the dough into a ball after kneading, before placing it in a lightly oiled container for the first resting phase, until the dough doubles in volume
Shape the dough into a ball, place in a lightly oiled bowl, cover and let rise for 1 hour until doubled in size.
Ps: During the first rise of the dough, for maximum flavor, you can add sesame seeds on top of the dough after browning, just before letting it rest until doubled in volume. This will add a slight crunchy texture after cooking.

Shaping

Degas the dough, divide it into 4 equal portions. Form small balls and put tension by rolling them into a circle.

Second lift

Place the balls on a baking sheet lined with parchment paper, cover and let rise for 30 minutes.

Gilding and cooking

Mix the egg with a little milk, brush the balls. Bake at 180°C for 15-18 minutes. When removed, brush with melted butter.
