Ingredients needed

To make the burger buns:

  • 350g of T65 flour
  • 7 g of salt
  • 35g of white sugar
  • 1 egg yolk and 1 whole egg
  • 40g of unsalted butter

To make the gilding:

  • 1 whole egg
  • A little milk

Preparation of the recipe

In the bowl of a stand mixer, mix the flour and salt.

Liquid mixture

In a bowl, combine the warm milk, whole egg, egg yolk, sugar, and dry yeast. Mix well with a whisk to incorporate all the ingredients and dissolve the yeast.

Combination

Add the wet mixture to the dry mixture. Knead at low speed, then slowly increase the speed once the wet mixture has been absorbed, for 3 to 4 minutes until you obtain a smooth dough.

Add the soft butter in pieces and continue kneading for about 10 minutes.

First rest
Hand shaping the dough into a ball after kneading, before placing it in a lightly oiled container for the first resting phase, until the dough doubles in volume
Form the dough into a ball, place it in a lightly oiled container, cover and let rest for 1 hour until the dough doubles in size.
Ps: During the first rise of the dough, for maximum flavor, you can add sesame seeds on top of the dough after egg washing, just before letting it rest until doubled in volume. This will add a slight crunchy texture after baking.

Shaping

Degas the dough, divide it into 4 equal portions. Form small balls and stretch them by rolling them into circles.

Second round

Place the balls on a baking sheet lined with parchment paper, cover and let rise for 30 minutes.

Gilding and cooking

Mix the egg with a little milk and brush the balls with it. Bake at 180°C for 15-18 minutes. When removed, brush with melted butter.
